The Sakai Takayuki Tokujo 08441 kyo-saki is a remarkable Japanese kitchen knife. Recognizable by its thick spine and short, but straight edge. By pushing the spine of the knife during use you can easily cut through the spine and solid bones of the eel. The thick spine of the knife is welded together. The welding seam is enhanced with a thin layer of clay. This looks like rust, but was added to prevent rust.
