The Sakai Takayuki VG-10 Honyaki Shoryu 00201 yanagiba is a one-sided grind kitchen knife with unparalleled cutting qualities. Thanks to the 27 long blade you can make long cutting movements. One per slice. This enables you to cut extremely thin slices of meat, fish or vegetables. Ideal for sushi or sashimi! The knife is made according to the Honyaki method. One of the oldest forging techniques in Japan. Honyaki knives are made from one piece of top-quality carbon steel and forged by hand. The time, effort and materials used ensure that the Honyaki knives are very valuable. The side of the blade is enhanced with the word ‘Shoryu’ which means flying dragon. The knife comes with a Sya sheath. A traditional sheath that enables you to safely store the knife.
