This stunning Wüsthof Amici santoku is enhanced with 17 cm blade with dimples. A Santoku is the Japanese version of the chef’s knife. Just like a chef’s knife, you use a santoku to cut meat, fish and vegetables. The cutting technique you use, however, is different. The dimples in the blade create a barrier of air in between the blade and the ingredients you are cutting. As such no ingredients stick to the blade.
