The Wüsthof Gourmet carving knife is, because of its 20 cm long blade, perfect when cutting small pieces of meat. This knife is too small to cut through ham or roast beef. This is also called tranching. This is possible with a chef’s knife, but with a carving knife you can cut even thinner slices, often because the blade is narrower.
